"In winter, since that is when we grow wheat, the hills are covered with the most vibrant emerald green. We love to
eat and cook... For the holidays you will be able to taste specialties of the local cuisine
that you never had before. Spring explodes in March, with all the wild flowers and
mimosa blossoms. The fruit trees start to bloom then and reach their peak in April.
It is time for fresh asparagus, artichokes, peas, and all the new lettuces. May and June
are fragrant with roses, lilacs, irises and peonies. Every house has flower pots and urns
outside the door. July and August are opulent with fruits. Peaches, plums, cherries, and
apricots are picked ripe from the trees. It is the time to go swimming at the seashore and
have a great fish dinner in Orbetello or Follonica. In October and November people are
making wine, collecting chestnuts and wild mushrooms in the forest...it is a splendid time
to be there. Even if San Lorenzo has a beautiful church, you shouldn't miss San Galgano,
the most spiritual and gorgeous Gothic abbey inTuscany. It is in the middle of the Tuscan
hills a few miles on the road after Monticiano.
